Stuffed Chicken Breasts á la Fredrik

This is for my buds at the facebook group ”LeanYou”.

Chicken breasts
Bacon strips 2-3 per breast
Feta cheese 30g / 1 ounce per breast
Sundried tomatoes in oil
Cooking Cream
Olive oil or similar


Take your chicken breasts, open the halves like a book with your knife. Make sure you dont cut the entire way through.

Take a handful of sundried tomatoes (I prefer the ones in oil).

They should look something like this;

Chop the tomatoes and feta cheese into smaller pieces

Take the  chopped pieces and shove as much of them as you can into your chicken book that you sliced above.

Close the book, err, chicken breast.

Wrap bacon around the chicken breast, 2 or 3 strips of bacon. Its up to you. Personally I’m a big fan of bacon so the more the merrier.

Wrapped and ready they should now look something like this;

Then put them in an oven-safe baking dish, I usually use one made of glass. Its up to you.  Slap some olive oil on the dish before you place the baconbombs in there.

Grind some salt and pepper on those bad boys.

Pour some cooking creme into the dish. 2-3 deciliters or more should do the trick. This will make an awesome sauce.

Now shove that dish into the owen. I usually cook at 200C  / 392F for 20-30 minutes. If you have a cooking thermometer, use it and set the alarm to 74C /165F. Then stick that into the deepest part of the chicken.

While you wait, make some salad and cook some broccoli or whatnot so you have something on the side.

When they are done, make sure you don’t waste the good sauce. It goes surprisingly well with broccoli!
